Most gua bao in Nashville are too dense. I’m not Chinese and thus know nothing, but I do know they should be more pillow than puck. I’ve eaten the latter, and I did not like them! So I was thrilled to discover the bao Platonic ideal at Xiao Bao. The light, steamed buns (bao means “bun” — don’t be redundant and say “bao bun”) are legitimately ethereal in that they are too good for this world. The breakfast bao is stuffed with fluffy scrambled egg and topped with barely melting American cheese for a salty, savory pick-me-up. It’s a high-low, American-Chinese, lunch-breakfast miracle — just don’t call it a bun.
