Gio’s Chicago Pizza isn’t as established as other deep-dish purveyors in Nashville (or as visible, since they operate out of the Citizen Kitchens commissary in the Nations). But their deep-dish pies are genuinely just as great as what you’ll find in Chicagoland’s greatest G-named pizzerias. That’s thanks to head chef Greg Knotek, who cut his teeth in both fine dining kitchens and at Al’s Italian Restaurant and Pizzeria in the Chicago suburbs. Don’t sleep on the also-tasty tavern-style pizza, baked with a thinner crust and cut with a square “party cut” for sharing.
