When Cochon Butcher opened in Germantown, lovers of fine meats and sausages all over town rejoiced. As did many of Nashville’s cardiologists and the people who sell them their boats. But Chef Levon Wallace has delighted customers with his unapologetically decadent menu of sandwiches, sides, specials and suppers that revolve around creative and delicious presentations of meat. No dish on the menu is more beloved than Le Pig Mac, a double handful of a burger whose ingredients may remind diners (of a certain age) of a sing-along jingle from their youth: two all-pork patties, special sauce, lettuce, cheese, pickles, onions on a sesame seed bun. As much as eating it may delight your palate, it will also lay you low afterwards, but in a good way. Plan for some downtime after lunch. CHRIS CHAMBERLAIN
