Best Fried Thing

Buttermilk and butter beans and crunchy crust — that’s just what’s on the outside of Black Rabbit’s rillettes. It’s done thusly: They take pork, add salt, cook it in fat and then mix it all up. Since the folks at Black Rabbit have never done anything halfway, they then bread the patty, fry it like chicken and serve it over cool, luscious lima beans swimming in buttermilk — because they want to kill you, but they want you to die happy.
