Best Ribs

This is heretical, but here goes: The best Memphis-style, dry-rub ribs aren’t in Memphis. I know, I know, I can practically feel the hate coming from Bluff City for saying that out loud, but Carey Bringle’s ribs at Peg Leg Porker are some of the best anywhere. I had actually sworn off that style of ribs years ago after a bad experience at Charlie Vergos’ Rendezvous in Memphis, but Peg Leg’s brought me back over, with an amazing tenderness paired with the right bite from the magic dusting of dry rub. You can sneak a little sauce on there if you want, but it’s also great without. STEVE CAVENDISH
