It seems a little cruel to honor brisket that can’t be eaten anymore, but Bill Laviolette’s Shotgun Willie’s BBQ is the closest thing to Texas that this city’s ever gotten. Situated in a smokehouse trailer and regularly found parked outside breweries on both sides of the river, Shotgun Willie’s offered a barrage of smoked meats that was just too good for this world. They closed down in May, but with any luck, Texas-style brisket won’t be gone from Nashville for long. LANCE CONZETT
