If you’re a sucker for the spicy/fried combination — and here in Nashville, hot chicken is the gold standard — Woodlands offers a terrific vegetarian alternative. And don’t let the adjective “dry” in the title mislead: While these delectable cauliflower fritters are not served in a plate of sauce, per se, each piece is coated with an exceptionally satisfying combination of soy sauce, garlic, ginger and whatever secret ingredients provide the significant blast of heat. As for spice level, I’m a “medium” at Prince’s Hot Chicken Shack, and I’d say the medium spice level at Woodlands is comparable. Pro tip: A mango lassi does wonders to tame the burn. JACK SILVERMAN
