Whoever took the reins of the kitchen at Husk from Sean Brock was going to have some big chef’s clogs to fill. Nobody should question the ultimate decision to have Katie Coss take over, as Katie Coss had worked every station in that kitchen and trained those same cooks. She’s added ingenious touches to the menu while preserving Husk’s dedication to local seasonal ingredients. As soon as Coss was named exec, the photo of Willie Nelson that watched over the ember-fired grill in the kitchen was replaced by a beatific photo of Dolly Parton, and we can’t think of anything more appropriate!
