Trevor Moran of The Catbird Seat is like the cool cousin who moved here from Europe (Ireland by way of Denmark, actually), introducing us Nashvillians to the exhilarating heights of avant-garde cuisine. (Proof of how good he is: He’s been enlisted by chef René Redzepi to return to Denmark for the next iteration of Noma, his former post, frequently cited as the finest restaurant in the world — so take advantage of his remaining time here unless you have serious frequent-flier miles.) Tandy Wilson, of Germantown fixture City House, is like the cool older brother who keeps turning us on to the mind-blowing experience of Southern ingredients filtered alchemically through a rustic Italian vibe.
