When The 404 Kitchen opened last year, the house-made burrata was an instant hit among diners. Paired with seasonal fruits, vegetables, and delicacies such as black truffle, the burrata — a semi–soft ball of mozzarella cheese and cream made fresh every day — has become one of the restaurant’s signature dishes. If chef Matt Bolus ever dares to remove it from the menu, I suspect there will be riots in the Gulch.
