Wild Bill—and that's all the name he's giving out—has got a stockpile of caffeine, a passion for choppers and the recipe for Café du Monde's beignets, and he's rolled them all into Will Bill's Beignets & Bikes. Next door to The Palm restaurant, Wild Bill's serves New Orleans-style coffee, hot dogs and beignets. Bill has renovated one of Nashville's oldest structures into a cross between a Hard Rock Cafe and a Starbucks (his description), decked with celebrity cycles and furniture fashioned from chopper parts.
Located at 104 Fifth Ave. S. (phone 255-1842), Wild Bill's is open 8 a.m. to 10 p.m. Monday through Wednesday, 8 a.m. to 11 p.m. Thursday through Saturday and 9 a.m. to 8 p.m. Sunday. As always, if you get there before us, please report back on Bites.
