Fried avocado at Saffire
This Thursday, Saffire in Franklin is showcasing the new seasonal menu items from chef Jason La Iacona in a special tasting dinner of five courses (plus an amuse bouche). Each course will be accompanied by seasonal cocktails as well. Chef La Iacona and Saffire host regular tasting dinners, but this one is unique in that it's introducing dishes you can return to enjoy on another visit, since they'll be on the menu. At least for a time.
The dinner starts with the return of fried avocado wedges, a customer favorite, and continues with two vegetarian items — baby kale salad with pepitas, peppered hazelnuts, aged cheddar, and buttermilk goddess dressing, and the "Pasta Pouch," filled with butternut squash, goat cheese, brown butter almond sauce, and topped with pepitas. Also included are a rib taco and short-rib plate. The dinner finishes with a cherry hand pie.Â
