Jet Pilot at Chopper
It’s been nearly two years since Barista Parlor’s Andy Mumma and his partners Bryce McCloud (Isle of Printing) and Mike Wolf (formerly Husk) announced their plans to open the tiki-themed Chopper in East Nashville. But one look at the meticulously curated space, which opened last month, makes it clear that the crew used its time wisely. There are beautiful booths, wall fixtures in the shape of robotic faces, and an enormous golden robot (built by McCloud) hovering over the massive, three-sided wraparound bar.
A complete reimagining of the space that was formerly home to a quiet wine bar called Bar Luca, Chopper is brightly colored and inviting, complete with a fanciful backstory about “Island X,” the fictional locale from which the bar derives its inspiration. But that’s all just a prelude to the star attraction — the drinks, many of which are big, showy affairs. Chopper offers its own takes on traditional tiki drinks like the mai tai, and there’s a daiquiri happy hour 4 to 6 p.m. on weekdays.
My recommendation? Go with the Robo Zombie ($14), a fiery, dramatic ass-kicker of a concoction served in custom ceramic robot mugs (which are available for purchase and pictured on the cover of this week’s Scene). Made with dark rum and fassionola — a type of rich, fruit-flavored liqueur — the Robo Zombie comes topped with a flaming shot of Bacardi 151 in a lime on top, plus mint. It’s smooth but very potent — hence the “limit one per guest” note on Chopper’s menu. If you’re looking for a lighter take on the same flavors, the Jet Pilot (also $14) is an excellent option. And if you want to cut loose with three of your pals, the Scorpion Bowl ($38) serves four.
Chopper also serves wine and seasonal frozen drinks, though there’s no beer — at least not yet. The menu also promises food in the near future: “Sandos and rice bowls coming soon!”
