Chef Shuai Wang Coming to Otaku Ramen for a Pop-Up

I’ve been fortunate enough to get to enjoy Shuai Wang’s food and also take a noodle-making class from him during the past two installments of the Charleston Wine + Food Festival. The young chef was a 2017 James Beard finalist for Rising Star Chef of the Year, and the editorial choice in Eater Charleston’s 2016 Chef of the Year, so he’s definitely one to watch.

Together with his wife, Corrie, Wang runs Short Grain, the Japanese-leaning, Charleston-based food truck that has become a mandatory visit during trips to the Holy City. He’s taken the truck off the roads of Charleston for the month of August, which means he’s free to come visit us here in Nashville on Sunday, Aug. 19, 9 p.m. to midnight. He’ll be parking at Otaku Ramen at 1104 Division St. in the Gulch for this one-night-only late-night event.

“Nashville needs more renegade Asian food," says Sarah Gavigan, chef and owner of Otaku Ramen. "We are really excited to have Short Grain’s Chinese-Japanese mashup in Nashville. It's going to be fun, it's going to be delicious, and we're going to have a great time welcoming this talented chef." The menu looks fantastic:

Onigiri: market fish, house cured duck ham, whipped uni, shiso, nori

Dumplings: smoked fish & beet, dill crema, chili oil, sunflower shoots, horseradish

O.G. Chirashi: market fish, masago, pickled ginger, cucumber, spicy mayo, ponzu, furikake

Sichuan lamb noodles: crunchy vegetables, soft herbs, peanuts, taré

You might want to eat a small, late lunch that day.
