Pumpkin agnolotti with pancetta, pecans, and pecorino
360 Wine Bar and Bistro — the restaurant near Belle Meade recognized by Wine Spectator and USA Today for its wine list — has updated its menu for winter. As expected, the new menu focuses on seasonal produce with items created to be paired with wine.
Executive chef Will Uhlhorn knows quite a bit about creating food with wine in mind after heading the kitchens at F. Scott’s, Table 3, and Miel. Plates are small and intended to be shared so that diners can pair with a variety of wines from the hundreds available.
Because Uhlhorn works with local farmers, the menu can change based on what’s available during the week, though throughout winter, it’s an easy bet that root vegetables, kale and brassicas will be on the menu with a selection of salads, pastas and proteins. Early feedback on the menu indicates that the tuna tartare, rabbit wurst, baby carrots and broccoli are popular favorites. On a recent visit, my husband enjoyed the roasted cauliflower and Brussels sprouts and pumpkin agnolotti while we shared a snack of a generous portion of olives and a vegetarian mushroom risotto with shaved truffles. We shared glasses of a Tempranillo and a Grenache from the selection of wines by the glass.
360 Bistro is also open for lunch with a selection of primarily hearty salads and sandwiches (including the very popular chuck burger) as well as Sunday brunch.
