Jake's Bakes Expands to Retail Cookie Shop on Elliston Place

, the company was launching delivery of warm, just-baked cookies (and cold milk) to night owls in a five-mile radius of a shared commercial kitchen. That was January 2013, and y'all must be ordering a lot of cookies, because Jake's Bakes announced this week that it is opening a retail location.

Permits were filed this week to begin construction on the new shop on Elliston Place (the former site of a Smoothie King, which also has another location across the street).

"If I could have dropped a pin for our perfect location, it would have been right there, or very close," says owner Jake Veyhl. The new shop's proximity to multiple college campuses, three major hospitals and countless office buildings puts it smack in the center of current cookie customers.

Don't panic about your munchies-fueled need for cookie delivery. Even with retail space, Jake's Bakes will remain primarily a delivery business. The new location will allow the team to bake all day, rather than only when they could get free kitchen time in their shared location, meaning more cookies for everyone. The retail shop will have a counter for warm cookies to go — if you can't wait for delivery or you live outside of the delivery zone. (The current delivery zone is likely to change slightly, but the exact parameters have not yet been determined.)

While delivery minimums ($9) will still exist, in the shop you'll be able to purchase just one warm, individual cookie. (Assuming, of course, you can eat just one.)

Longer operating hours will cater to the times when cookie cravings strike: likely 10 a.m. to 11:30 p.m. Monday through Saturday, opening a little later on Sundays.

Veyhl hopes to be in the new space by early November. Until then, orders can be placed via the Web or by phone (615-429-4264). Once settled into the new digs, he hopes to expand the current menu of eight cookie varieties with some seasonal flavors, and likely ice cream and ice cream sandwiches when the weather warms up again.
