Much of the restaurant industry had to rapidly change its business model due to COVID-19, and we’re highlighting the Nashville places that are attempting to stay open. As we hang out here in phase two at least though mid-August, we’re continuing to give you a critic’s pick for a restaurant and a dish, as well as a running list of restaurants offering takeout and delivery that you can support. Today: Baja Burrito.
Oh, Baja Burrito! How I've missed you!
Yup, the beloved burrito joint is open once again after having to "hit the pause button" back in June. Everything is pretty much the same, save for a few COVID-19-related upgrades — there is now a glass separator on all the tables, and the giant help-yourself bowls of salsas have been replaced with stacks of small cups of salsa that have already been portioned out (though you can still take as much as you'd like).

For lunch yesterday I got one of my favorite cheap meals in Nashville, the Peasant Plate. Beans, rice, a guacamole salad and a giant bag of chips for less than $7. (You could also get it with corn tortillas, but I love Baja's chips more than I love most people, so chips it is.)
It was more crowded inside than I expected for a Monday afternoon — I joined a line of about eight people — but most folks were getting their food to go, and every person I saw was wearing a mask (unless they were actively eating). Everyone was also doing their best to give one another space as they filled up their soda cups and got more salsa. The patio is open, too, if you don't want to eat inside.
As I paid for my food I told at the woman working the cash register that I was so happy to have Baja open again. She laughed a kind of knowing laugh, looked at the line of 10 or so folks behind me and said, "Yeah, we've been busy."
Welcome back, Baja.
