404 Kitchen's Three Nights of Southern Entrees
A notable restaurant trend during the pandemic has been the effort by hundreds of restaurants to place their products on national food delivery services like Goldbelly. Once primarily a culinary gift service, you can now find all sorts of option on Goldbelly. There are pastrami sandwich kits from New York delis and a fully-cooked brisket from Franklin's Barbecue, all of which are available for delivery — mean you or anyone of your choosing can enjoy a culinary experience that’s at least close to visiting an iconic restaurant (which you aren’t doing because you’re not traveling or eating inside restaurants yet).
But in most cases, these food products are being prepared, packaged, stored and shipped through copacker services, meaning those ribs may indeed be seasoned with your favorite barbecue joint’s proprietary rub, but they may have never actually been inside a pit in the same state. That’s alright though — in these times we take what we can get.
However, chef Matt Bolus of The 404 Kitchen has come up with a novel way to actually offer food that has been cooked in his kitchen for national delivery through a partnership with Williams Sonoma. Bolus has had an association with the kitchenware store and catalog operation for quite awhile now, so it’s a logical next step to combine his cooking with their logistics system.
“I’ve had the pleasure of working with Williams Sonoma for several years to support different projects and events. I’m thrilled to expand on our partnership to offer our Southern-style cuisine to their food-loving community,” explains chef Bolus. “It’s a natural fit as we share similar standards for sourcing and ingredients, and I’m proud of the food that we’ve curated exclusively for their customers.”
The partnership officially launched just after Christmas and offers an interesting selection of dishes and meal kits that have been prepared by Bolus and his staff.
At launch, food available from The 404 Kitchen on Williams Sonoma's site includes:
- Complete Southern Fried Chicken Dinner: Includes 10 pieces of Southern fried chicken that have been brined, smoked and buttermilk fried. It is accompanied by Southern-style collard greens cooked in a mushroom broth, crispy fingerling potatoes, and 2 rounds of chef Bolus’ celebrated skillet cornbread with sorghum butter.
- Ham and Biscuit Kit (one dozen): This kit features fluffy, housemade biscuits glazed with a flavorful and smooth honey butter and paired with thinly sliced country ham from lauded Benton’s Smoky Mountain Ham in East Tennessee. Chef Bolus also includes his Tennessee Whiskey Jam, which is intentionally bold and slightly sweet.
- Nashville Hot Chicken Kit: Including everything you need to enjoy authentic Nashville Hot Chicken from home, this kit features 10 pieces of chicken that are slow-brined, slow-smoked and buttermilk fried. The warm fried chicken is then tossed in Bolus’ special Nashville Hot Chicken spice blend and a smooth chili oil to give that signature Nashville heat.
- Three Nights of Southern Entrees (option for two or four people): Enjoy 3 nights of entrees specially prepared by The 404 Kitchen. Whether feeding two people or four people, this kit includes three nights of Southern-inspired entrees, including: 8-ounce hanger steaks sous vide to medium rare and served with crispy fingerling potatoes, caramelized Cipollini onions, and a housemade steak sauce; shrimp and grits with lightly steamed shrimp and creamy stone ground grits topped with chopped scallions and tomatoes and crispy country ham; a tomato-forward pork Bolognese made with ground pork, fresh herbs, Tuscan olive oil, whiskey, and apple cider vinegar, and a sauce finished with a gorgeous cream and cane syrup to add complexity and richness. It is served over a housemade frascatelli pasta.
