I was not familiar with the
Cheese Chick— aka
Christine Hyatt— until I stumbled upon
this videoof her talking with Kathleen Cotter, head monger of cheese at East Nashville's Fromage Mahal,
Bloomy Rind. Subjects covered include North Carolina cheese, nicely oozing cheese and delicious, delicious cheese. This is HD (and nicely shot therein, I might add), so it might take a while to load if, say, someone else in your house is streaming an episode of Downton Abbey.
