Owners Melanie and John Cochran met while slinging beers at Beyond the Edge, became vegans — then realized there was nowhere to eat. They solved that dilemma in 2009 by opening their East Nashville restaurant, The Wild Cow, which sources fresh, primarily local produce to create satisfying, healthful dishes (soups, salads, sandwiches, seitan, say what?). Don’t get us wrong: We happen to appreciate meat as much as Jeremiah Johnson — but we don’t miss it in this food. The homemade sauces alone are so delicious it’d be a shame not to lick your fingers.
