There’s an element to writing about a place like Tacos y Mariscos Lindo Mexico that feels almost criminal. Spreading the word about a well-kept secret like this little Mexican taqueria in Madison is, as they say, “blowing up the spot.” But I can’t in good conscience call myself a journalist if I’m not going to tell the truth, and the truth about Lindo is that its pollo asado al carbon — that is, the restaurant’s barbecued chicken — is a consistently exceptional meal at an exceptional value. For $12, you’ll receive a whole grilled chicken along with tortillas, rice, beans, fried onions, grilled peppers, lettuce and pico de gallo. It’s enough food for two full meals — on more than one occasion, I’ve eaten half for lunch and the other half for dinner — but most importantly, it’s some of the most flavorful, moist, well-prepared chicken I’ve ever tasted, imbued with smoky flavor thanks to being cooked in Lindo’s outdoor barrel grill. It’s worth the short drive to Madison, and if you decide to go full-on hedonist, stop at Shipley Do-Nuts for dessert on your way back to town.
