I’ve said many times before that I really appreciate chef Sean Brock’s culinary obsessions and have often benefited from his years-long pursuits of the perfect fried chicken and the ultimate cheeseburger. For a while now, the noted chef has also been toying with an idea to create his Platonic ideal of pizza inspired by his frequent visits to Tokyo.
I go my first hint when I interviewed him in the kitchen of his erstwhile restaurant The Continental. When I met him in the kitchen, he was excited about plans for rolling carts with carving stations for prime rib and pâté en croûte, but he was positively giddy about his ongoing pizza experiments in his new kitchen.
Now it looks like he’s ready to take his pizza passion public. About a week ago, Brock began advertising on a restaurant job board for positions at his new upcoming project, Sho Pizza Bar, which will be located at 2300 Riverside Drive in the same retail complex as Ladybird Taco. In the job description, Brock describes the upcoming Sho as “a neighborhood restaurant focusing on Tokyo inspired Pizza, seasonal produce, delicious beverages and warm hospitality.”Â
He also shares a bit about the inspiration behind the new spot and the planned ambiance of the space. “Sho is derived from the Japanese word Shokunin, which means an artisan that masters their profession," reads the listing. "Award-winning Chef Sean Brock and his team combine cooking techniques and ingredients from Italian and Japanese traditions along with the highest quality, local and seasonal produce. Walking into Sho, you immediately become part of the show with the wood burning pizza oven centered in the open kitchen and bar style seating wrapped around it.”
We don’t have any info about an opening date, but if they’re hiring, it shouldn’t be too long now!
