For the second installment of Fancypants’ fun barbecue collaboration series, chef Matthew Meeker and his kitchen crew are inviting Amy Watson and Clinton Spruill of Saap Saap BBQ to come over to 921 Dickerson Pike for a little cookout tonight, Oct. 5, from 5 p.m. until they sell out. Saap Saap is currently in residence at Harding House Brewing Co. at L&L Market, but they’re not usually open on Mondays anyway — so they’re free to spread the Laotian barbecue love across the river.
The combined staff will prepare a sort of “smoked meat-and-three” menu built around beef brisket, pork tomahawk chops and banana-leaf-smoked fish alongside dishes like smoked cabbage and sticky peach rice. Each team will also offer up two special sauces apiece to complement the meals.
The bar at Fancypants will be pulling out some special allocated bourbons for the evening, and everything on the menu will be available à la carte. Attendees will pay a non-refundable $5 deposit at time of reservation, but it will be credited against your final bill. Reservations are available until 8 p.m., and walk-ins will be accommodated if there is room (and food) left.
Personally, I wouldn’t take the chance. Just go ahead and nail down your spot!
