The New Orleans-based wife-and-husband team of Jennifer and Erich Weishaupt are planning to open a location of their breakfast and brunch restaurant Ruby Sunshine later this year in the Hillsboro Village parcel last home to Jackson's Bar and Bistro.
The announcement, made in a release Monday, follows a similar November 2018 announcement that parent company Ruby Slipper Restaurant Group was planning to open a Ruby Sunshine this year in downtown Franklin’s 231 Public Square building. That eatery began operations in March.
This will be the fourth Ruby Sunshine location, joining those located in Knoxville; Birmingham, Ala.; and, as noted, Franklin. More are slated to open through 2020, according to the release.
The future Ruby Sunshine space will accommodate about 174 guests. The address is 1800 21st Ave. S.
The LaGasse family owns the 0.29-acre property, having acquired it in September 1995 for $535,000, according to Metro records. The site was once home to a Dunkin Donuts before Jackson's established a presence. That restaurant and bar closed in late 2018, with the building razed shortly thereafter. Ruby Sunshine will be open seven days a week. The menu will feature “New Orleans twists on Southern breakfast staples” like bananas foster pain perdu, catfish-and-grits, white chocolate bread pudding pancakes, benedicts and morning cocktails (mimosas, brandy milk punch and Bloody Marys). Ruby Sunshine says it incorporates local ingredients whenever possible and recently partnered with Nashville-based Goo Goo Cluster to create a specialty pancake for the Franklin location.
The days and hours of operation will be 7 a.m. to 2 p.m. Monday through Friday and 7 a.m. to 3 p.m. Saturday and Sunday.
Ruby Slipper Restaurant Group also operates 10 Ruby Slipper Cafe locations across the Mississippi Gulf Region.
