If you’ve never tried paella, the Spanish staple one-pan meal that consists of  short-grain “bomba” rice, fragrant sauce, vegetables, seafood and sausage, you’re missing out. Digging out a helping of this flavorful communal meal straight from the pan it was cooked in is a real treat, especially if there is an appropriate layer of delicious caramelized crispy rice on the bottom, known as socarrat.

While nothing is especially difficult about cooking rice and accouterments in a big pan, the preparation and presentation of a proper paella becomes even easier with a little instruction and practice. That’s why I’m so juiced about hearing that Barcelona Wine Bar Edgehill is presenting a paella cooking class this Wednesday, April 24, 7 to 9 p.m.

This immersive class will cover how to make an authentic sofrito, the aromatic base of peppers, tomatoes, garlic and onions that is a crucial first step in many Spanish dishes. Then students will learn how to assemble, cook and serve a paella. Space is limited, so buy your tickets here for $14 for a fun and informative night of cooking, learning and eating.

Note that your $14 ticket holds your spot at the class, and an additional $17 will be charged at the event to cover wine pairings and gratuity. Still, it’s a heckuva bargain!
