Whether it’s in a music studio, a writers’ room or a restaurant kitchen, Nashville is at its absolute best when creative folks come together to collaborate. The next couple of weeks will feature a trio of cool collabs at local restaurants, so make plans to check them out.
As my colleague Margaret Littman wrote about earlier this month, Bagelshop is partnering with local chefs as part of its New Year, All Year bagel collaboration series, and for October, they’re teaming up with Tailor chef Vivek Surti for a special sandwich in honor of Diwali. Available on Oct. 29 and 30, the Dabeli sandwich draws from the traditional Gujarati street food of Surti’s heritage for flavor inspirations, featuring a spiced potato patty, tangy tamarind chutney, spicy chili peanuts and crispy sev, all served on an onion bagel. (I had to look “sev” up — so it’s crispy chickpea noodles, if you also didn’t recognize that one.) The sandwich will be pressed on the grill with every ingredient made in-house under Vivek’s direction.

In another bit of Tailor news, Surti recently announced on Instagram that the restaurant started Sunday lunch service last week, with an abbreviated version of his evening menu served as a coursed lunch beginning at noon. Patrons will need to make reservations for lunch, but unlike dinner, prepayment is not required.
On Monday, Nov. 11, the kitchen team at Mimo Restaurant and Bar at the Four Seasons Hotel Nashville is partnering with the award-winning Nashville Symphony for an evening of Italian-inspired cuisine and classical music. The four-course dinner will feature a menu inspired by classical music, and Mimo sous chef Nicky Miscia will pair the courses with wines selected by assistant restaurant GM Stephanie Dumont. Musicians from the symphony will provide the background music for diners with classical and contemporary pieces that will complement the meal.
The four-course experience is priced at $150 with reservations available from 5 until 10 p.m. online or by calling the restaurant at 615-610-6990. Your reservation will also entitle you to three hours of free valet parking, a definite perk in the busy urban core.
Finally, Fonda on 12th chef Roberto Santibañez has invited chef Roberto Solis from Merida, Mexico, to join him on Tuesday, Nov. 12, to create a special Taste of the Yucatan Dinner. The cuisine of that region is quite different from the traditional Mexican fare most Nashvillians are used to seeing on the menu, so this should be a real treat.
Among promised dishes in the six-course dinner are turkey consommé with masa dumplings, sea urchin on a tortilla “boat,” roasted pork belly with achiote and xnipec and cornish game hens stuffed with picadillo stew. After a cocktail reception with passed apps, the dinner will be paired with wines from La Cetto and cocktails featuring Xtabentún Liqueur, a honey and anise spirit that is almost always my carry-on purchase from the duty-free shop on my return flight from the region.
