While everyone is hemming and hawing behind the wheel of their SUV about saving the earth, tayst chef-owner Jeremy Barlow is biking to his Hillsboro Road eatery—where he swaps paraffin candles for beeswax, runs a recycling program and reduces water output in the kitchen sinks. The mad kitchen scientist—known for wacky dinners based on the McDonald's menu and movie theater snacks—is the first restaurateur in Nashville to earn certification from the Green Restaurant Association. The designation makes tayst one of only about 60 such eco-eateries in the country. It's a trend that should catch on. (Conversely, restaurant names in all lower-case letters? That's a trend that could stand to go away. And Jeremy is just the man to lead that revolution, too.) —CARRINGTON FOX
