You'll want to pop a Caduet before taking on the chicken at Bailey & Cato's. Blood pressure and cholesterol levels elevate the minute you lay eyes on this East Nashville cottage restaurant, which looks like a scene from road-foodie Michael Stern's wet dream. Once inside, you'll encounter piles of golden yardbird alongside other B&C favorites like mac and cheese, fried cornbread, ribs and the sweetest tea this side of Mrs. Lincoln's Boston Cook Book. According to local record producer Joe McMahan, who operates a studio a stone's throw from the family-owned restaurant, the secret seems to be in the breading. "It's the crunch and the spices together," he says. "I can't put it into words." B&C's employees are even less forthcoming. "I could tell you," says one, "but then I'd have to kill you." —PAUL V.
