I guess they're not all "chefs" in the stereotypical sense, which may explain why one or two didn't make it, but I could make a case for all of them. Surprising to me too about Holden-Bache...I have to imagine it's a timing thing (I would assume Krajek made it more for his historic work than Rolf and Daughters...b/c otherwise I couldn't explain Holden-Bache's omission, since his restaurant has been open longer).
