      <![CDATA[- Easy-peasy ricotta cheesy -<br>
<br>
Mario Batali’s homemade ricotta:<br>
<br>
2 quarts whole milk<br>
1 pint half-and-half<br>
Generous pinch of kosher salt<br>
1/4 cup distilled white vinegar or strained fresh lemon juice<br>
<br>
Pour milk and half-and-half into a large enameled or stainless-steel saucepan, add the salt, and bring to a full boil. Remove from heat, add vinegar, and stir until the mixture has separated into thick curds and a clear liquid (the whey).<br>
<br>
Set a large sieve over a large deep bowl and line it with a double layer of wet cheesecloth.

      <![CDATA[I'm taking home - Hatcher's Dairy egg nog for my mom, toasted salted pecans from the Peanut Shop in the Arcade, Rice's country ham from Mount Juliet, some local organic carrots to glaze for Christmas dinner and Christmas afternoon I'm going to make fresh ricotta to have for breakfast Monday morning topped with honey.       <![CDATA[I slammed my way through the Game of Thrones books this year, and after reading about "fiery Dornish peppers" for the 20th time decided to figure out how to make them. Stuffed a variety of smaller peppers with goat cheesed mixed with chopped peppers, baked for about 15 minutes, finished for a minute under the broiler.
