I am guessing Nicki's referring to when she started reviewing restaurants full time. She started out as a freelancer for the Scene, then joined the Banner as a copy editor (where she and I fought comma splices side by side) before being promoted to full-time food and restaurant editor at the Banner.

Chris, I like Bourdain's theory that the Vegas outposts are farm teams for the big names to hold on to promising chefs / rising stars. Rather than outright lose them, give the kids their own kitchen under your brand.

The other thing about Las Vegas is that they made their foodie facsimile happen nearly overnight at the behest of corporate.

Having probably been to Vegas more than anyone else who comments on this blog, I have to respectfully disagree. While it may have the breadth of famous restaurants "created" by name chefs, I still contend that it's the World's greatest Food Court.

Many of those outposts of well-known establishments actually have a good portion of their food coming up to the dining room on elevators from megakitchens in the bowels of the casinos.
