As a food truck owner and small restaurant owner who wants nothing more than to sell ingredients that I can be proud to, I find more often than not my customers (especially at the restaurant) are upset when prices reflect the cost of local and correctly farmed proteins. Many times this forces me to only "feature" these proteins and these often go unsold. I would entirely welcome customers who share my own concern for where food comes from! Its a sad state of affairs when my customers demand lower quality (read: cheap) ingredients and think nothing of my having to buy factory farm sourced product to do it. I plead for the day when the demand for local, non-factory farmed products are the expectation of all restaurants! ASK ME! PLEASE ASK ME! DEMAND BETTER!
