I'm a total recipe follower for the most part. I might leave off an ingredient if I don't like it and think the final dish can do without it. I will sometimes come up with my own casserole concoction, but mostly I'm faithful to recipies. It would be nice to have the knowledge to create something without a guide.
Roots and Branches (another Asheville, NC bases company) makes awesome crackers to dip in this hummus. :)
It might not be original ... but I'd make a riff on ham and biscuit. :)
I would make a biscuit flecked with tellicherry peppercorns and studded with Dancing Fern Cheese. Fry the Ham and put it between two halves of a biscuit. And because something sweet is always nice I'd dab a bit of thyme apple compote on the biscuit as well.
