I went to a fantastic seafood class taught by Andrew, the sous chef at Miel last night. It was in a gorgeous private home and was informative, fun, and delicious.
He was the guy who took care of us at the CS when I went, and he is the nicest, funniest guy. One of the courses was a pigeon leg (with foot attached) that was a bit difficult to cut through. My girlfriend was having some trouble and Trevor walked up, and without a word placed a knife in front of her plate and then stood back and looked at her. She gave him an inquisitive look and he said, "oh, I'm sorry, the knife you were using appeared to not be working so I thought you could use a replacement." Perfect deadpan delivery. He's fantastic.
*Sidenote: the knives they have are designed to balance on the spine. Every detail is impeccable.
