Eric Ripert didn't come to Le Bernadin until opening chef Gilbert le Coze passed away in 1994, eight years after it opened in NYC. I'd say they've managed to overcome a chef change pretty well, as many restaurants have. Tyler Williams has brought a new energy to Woodfire Grill in Atlanta after Kevin Gillespie left, and Hector Santiago is reportedly doing a good job replacing Williams at Abattoir. This is a more normal occurrence than most folks are aware of.

I heard this morning that due to some unfortunate problems with their truck, the Jonbalaya taping today has been cancelled. Hopefully they'll get some pub on the next Eat St. swing.
