Let me start by saying that this rating could be higher. I like this place and LOVE the idea of true Southern-style food. Hot chicken is unique to the South and I am proud of it. I have nothing against Prince's. Please take my feedback without bias, but take it literally. This is for your information. I have eaten here 3 times in the past 1.5 years. The good thing is, the food is pretty good. I am a chili head, and I ordered the quarter chicken, very hot.
The menu and meal are very simple, and that's how it should be. You come here for hot chicken, not sushi. When I received my order, I was defnitely intimidated by the sight of my chicken after hearing horror stories about the heat, but that's why I was there. I carefully disected my chicken with a fork and knife, only to find it wasn't that hot. I proceeded with my bare hands, without a problem. I have made much hotter and tastier, myself, with a 10:1 mix of Dave's Insanity Sauce and Sweet Baby Ray's BBQ Sauce. The chicken was juicy, but bland...and no, my tastebuds aren't dead!
Before I continue the next 2 PARTS, let me say that I wasn't expecting this experience to rival J. Alexander's.
If you like clean kitchens, do not look through the order window into the kitchen. You will want to leave. The good news is that the hot greaase will kill off the dirt. I don't understand how they don't get shut down by the Health Dept.
If you don't have 2 hours for lunch, don't gp to Prince's. I don't know what the deal is, but they open at Noon...well, that's what the sign on the door says. They don't fire up the grease until 12:15 pm or whenever they decide to show up to work. My colleagues and I arrived at 11:45 am and didn't receive our orders until 12:45. This was not a fluke as I had the same experience the next two visits (hoping the first time was a fluke).
I hope the owners read this and take the criticism well. I know, from my own experience as well as other patrons', if the service was better and they opened at 11am, they would take their business to the next level.
It's worth the visit if you have the time.

If you have a Super Bowl Party order your wings from somewhere else. I placed an order for 100 wings the Friday before the game and asked they be ready by 4pm. When I went to get them I had to wait 2 1/2 hours before they were ready. The owner of the restaurant had an attitude of not caring. Next time I'll go to Wing Basket
