Last week we learned that chef Jamie Watson of Cafe Fundamental plans to open a new restaurant in the historic Marathon Village complex. Not yet named, the restaurant is going into the building at 1305 Clinton (across from the main Marathon factory space), and will feature a bar called Gearheads, run by Marathon owner and developer Barry Walker.
Here's an update. Last week, Watson told me French chef Hervé Malivert would be a minority owner and menu consultant on the project from afar. (Malivert is the culinary coordinator and director of food technology at the International Culinary Center in New York.)
Now it looks like Malivert is bowing out of the project. "Hervé's duties and responsibilities at ICC have made it impossible to participate, even though his participation was to be minimal," Watson says this week. "We just felt together that this wasn't the time."
Meanwhile, Watson says the opening date is looking more like September than August. Fortunately, Nashville has long, langourous autumns, because the outdoor dining component is going to be prominent.
Not only will there be a large deck wrapping around two sides of the building, the deck will include a secondary kitchen outdoors. Not many other Nashville restaurants have that convivial feature.
