The Farm House Restaurant To Open in Encore This Spring

The Encore tower already has chef Deb Paquette’s spot Etch operating in its ground floor, and now a second, separate restaurant is in the works for the mixed-use development at Third Avenue South and Demonbreun Street (about a block from the upcoming Music City Center).

It's called The Farm House — in honor of its farm-to-table approach — and the chef-owner is Trey Cioccia. He worked under Tyler Brown as sous chef at Capitol Grille, and later was executive chef at Cantina Laredo in the Gulch.

The menu at The Farm House will focus on "traditional Southern cuisine featuring modern technique and fresh, locally sourced ingredients," the company said in a release today.

Highlights include "house-cured and smoked meats, homemade vinegars and house-preserved produce," it said. Cioccia has lined up "a host of local purveyors including Allan Benton, Fall Mills, Wedge Oak Farm, Willow Farm, Hatcher Family Dairy and Anson Mills."

The restaurant will also offer a "refined bar program" with "high-quality bourbons, house-flavored moonshine, local microbrews and updated takes on Southern staples like the Old Fashioned."

The Farm House, which is scheduled to open in late spring, will serve lunch Tuesday through Friday, dinner Monday through Saturday and brunch on Sunday. Bites will share more details as they become available.

THE FARM HOUSE BRINGS SOUTHERN HOSPITALITY TO ENCORE THIS SPRING

New Concept from Trey Cioccia to Open in SoBro Mixed-Use Development in 2013

NASHVILLE, TN (February 26, 2013) -  Chef and entrepreneur Trey Cioccia, formerly of Cantina Laredo and Capitol Grille, is opening a brand new restaurant in late Spring 2013 at Encore, the mixed-use condominium development at 301 Demonbreun Street. Called The Farm House, the concept will focus on traditional Southern cuisine featuring modern technique and fresh, locally-sourced ingredients. The Farm House will be located in a 4,000-square-foot retail space of Encore. The décor of the restaurant will keep with a classic Southern aesthetic featuring handmade accents, furniture made from repurposed barn wood, Tennessee heirlooms, and warm, modern lighting.
 
“As a Nashville native, I want to share the flavors and culture I grew up with, and that’s exactly what people can expect at The Farm House,” said Cioccia. “SoBro has an emerging restaurant scene, and we think The Farm House will bring a new element that will expand on it. Whether locals are rediscovering their favorite Southern staple or tourists are exploring the tastes of the region, diners can expect The Farm House to offer unique plates, sophisticated service and an easy-going environment.”
Chef Cioccia is no stranger to the Nashville fine-dining scene. Holding dual degrees in Culinary Arts and Hotel & Restaurant Management, he has more than a decade of experience as a chef. During his time at The Hermitage Hotel’s Capitol Grille, where he served under Tyler Brown before being promoted to sous chef, the restaurant was named one of Nashville's Best Restaurants. Most recently, he was executive chef of Cantina Laredo in The Gulch.
 
With The Farm House, Cioccia will offer comfort cuisine with a modern twist with menu highlights including house-cured and smoked meats, homemade vinegars and house- preserved produce.  He has already lined up a host of local purveyors including Allan Benton, Fall Mills, Wedge Oak Farm, Willow Farm, Hatcher Family Dairy, and Anson Mills. Cioccia will also be providing some fresh vegetables directly from his own Davidson County garden for a true “farm to fork” dining experience.
Not to be overshadowed by the food, the Farm House will also offer a refined bar program featuring high-quality bourbons, house-flavored moonshine, local microbrews and updated takes on Southern staples like the Old Fashioned.  To complement the cocktail menu, bar guests can indulge in a plethora of fun bar snacks like crispy pork rinds and fried chicken skins.

“The time for SoBro has arrived, and we’re glad to welcome The Farm House to the area,” said Tony Giarratana, president of Giarratana Development which partnered with Novare Group to develop Encore. “With the Music City Center opening in May and the Omni and other hotels not far behind, SoBro will soon be infused with even more activity. Trey is opening a restaurant in a high-profile location during a very exciting time in Nashville.”

The Farm House will serve lunch Tuesday through Friday from 11:00 a.m. to 2:30 p.m., dinner Monday through Saturday 5:00 p.m. to 10:00 p.m. and brunch on Sunday from 10:30 a.m. to 2:30 p.m. In addition to the dining room and bar seating, a Chef’s Table will be available for tastings, meetings and private parties.

The 21-story Encore, which boasts 333 luxurious one- or two-bedroom homes, sold out of new homes last year. The building also features a total of 20,000 square feet of retail space, of which approximately 12,000 square feet remain. During lease negotiations, Austin Benedict with Colliers International in Nashville represented the building owners and Brandon Kuvara with C.B. Ragland Company represented the tenant.
