I've been a big fan of Chris Moran and his Louisiana Seafood Co.
ever since he first opened his stall at the Nashville Farmers' Market about a year-and-a-half ago
. Well, times change, and Moran has recently moved his operation out of the market. His plans for retail space are still fluid, but he has shared some details about the future. Moran is in the process of constructing two mobile trailers complete with refrigeration equipment to facilitate convenient seafood shopping for his selection of food fresh from the boats in Louisiana.
He also plans to have cooking equipment on the trailers for crawfish and shrimp boils, either in parking lots like a regular food truck or onsite for catering gigs. I've even heard rumors of a possible collaboration with fellow Gulf Coaster Patrick Barber which could include grab-and-go five-pound bags of cooked crawfish. Here's hoping that comes to fruition!
But NFM shoppers need not fret about their access to fresh seafood just because Moran has moved on to other waters. His previous space has been filled by Wild and Local Foods
, who will sell seafood, local beef and game out of their location next to Bella Nashville. Started by three roommates with a desire to provide sustainable meats and seafood to the Nashville market, Wild and Local concentrates on regional products that require less delivery infrastructure than corporate foods. Their beef comes from Dotson Farms and their chicken products come from Jolly Acres and Tippy Goat Farms. They even offer farm-raised rabbits if you want to try something more exotic.
