The Catbird Seat Lands on Bon Appétit's Top 10 New Restaurants List

Bon Appétit Magazine has released its annual Hot 10 List of America's Best New Restaurants, and Nashville's The Catbird Seat is perched at No. 5.

The list is compiled by Bon Appétit's columnist The Foodist, aka Andrew Knowlton. Not only does the list include an essay about each restaurant, it designates the eatery as an example of a current trend. In the case of Catbird Seat, it says, "What's the story behind today's most stylized restaurant dishes? Here's a look at tweezer food's most artful extreme."

To me, "tweezer food" is an overly clinical phrase to describe the luscious multi-course meals at The Catbird Seat (in my mind, the food as a whole is a lot more exciting than the sum of its carefully arranged parts). But it's fascinating to see one dish — Roast Pigeon With Hay-Infused Yogurt — photographed, broken down and explained in detail in the magazine's spread.

The magazine also cites co-chefs' Josh Habiger and Erik Anderson's credentials (Noma in Copenhagen, the Fat Duck in London, the French Laundry in Yountville, California, and Alinea in Chicago) before pronouncing the food "inventive cooking with soul." Check out the full article here.
