The biggest tool in my kitchen is probably me, but as for the most important tool, I guess I'm with Bourdain on this one.

Having faced two sinks filled with dirty dishes spilling over onto the adjacent counters at 5:30 AM today, I'm convinced the most important kitchen tool is of course the dishwasher.
I must say, it may not be the most important, but once I got a microplane grater, I couldn't live without out. I use it often!
Knives (just splurged on some awesome wurstof knives over Xmas- so it also might be that I'm still in lust with em).
@bender, my Wusthof knives are several years old and I'm still hopelessly devoted. Agree with Bourdain about one good knife--maybe two or three. At least three of the knives in my block see use about once a year. I just need a good chef knife, serrated, and utility, with a meat knife and fish knife on standby.
