
The full name of the restaurant is Urban Grub Fish Pit and Southern Cantina, which tells you a little something about the cuisine. The pieces may sound disparate, but Pennington told me in November that the uniting factor is cuisine from the regions surrounding the Gulf of Mexico. “You’ve heard of pan-Asian,” he said, laughing. “This is pan-Gulf.”
Pennington tapped the seasoned chef Paquette, known for the late, lamented Zola, a couple years ago to create the menu for his expansion of The Local Taco. Now she's helping develop the menu for Urban Grub. (That's in all her spare time when she's not working on her own upcoming restaurant, Echo at Encore.)
Urban Grub looks like it's growing by leaps and bounds every day. We'll told to expect it to open in late February.
