Summer Special at Watermark

When Chef Matt Bolus arrived at Watermark Restaurant last spring, he arrived with a great splash, including a fine showing at this year's edition of Iron Fork. I know several people who have wanted to try out some of his culinary stylings, but have been a little bit intimidated by the price points at the fine dining establishment. During the dog days of summer, restaurants have to come up with creative ideas to boost the number of nightly covers particularly during the middle of the week.

In an effort to solve both of these problems, Watermark is now offering a surprisingly affordable way for curious diners to experience Chef Bolus' brand of upscale Southern cooking with a prix-fixe menu that features regional specialties made with some of our favorite ingredients. And best of all, it's offered nightly, so you can even make a cheap weekend date of it. The menu features a choice of appetizer, entrée and dessert for just $40 per person, or $60 per person with wine pairings for each course.

The summer menu includes a choice from each of the following courses:

heirloom tomato soup
micro basil, olive oil
lettuce salad
mixed greens, tomatoes, cherries, almonds, blue cheese, port vinaigrette
Anson Mills grit soufflé
Bonnie Blue goat cheese, Benton’s bacon butter sauce, shiitake

South Carolina flounder
five bean succotash, Juliet tomatoes, Benton’s bacon
Jolly Barnyard chicken
gnocchi, baby spinach, wild mushrooms, fricassee
filet mignon
black truffle potato gratin, creamy spinach, red onion

rocky road terrine
crispy rice, peanuts & almonds, vanilla bean velouté, house made marshmallow
buttermilk panna cotta
cantaloupe, sugar baby, saba,
benne seed wafer

Tax and tip are not included, and the chef reserves the right to tweak the menu based on the availability of seasonal ingredients, but wouldn't you rather have what he thinks is at the peak of ripeness anyway? The deal is good for the rest of this month, so make your reservations soon.

[Note: As of 8/5/11, Chef Bolus is no longer working at Watermark. The prix fixe menu is still in place, but it will be under the direction of the former sous chef. The revolving door keeps spinning. We'll provide updates on Chef Bolus's future as they become available.]
