Luckily, our friends at Grand Cru recognize that some of us old fogeys still want to celebrate; we'd just rather do it within the friendly confines of our own homes where the only need to use an automobile is to pick up a bag of ice before the festivities begin. To that end, Grand Cru's monthly newsletter features two recipes that look like all you'll need to celebrate Cinco at home while you watch the Predators declare our dominion over America's Hat when they beat up on those pesky Canucks at the Bridgestone Arena.
First off, something for your glass:
The Original Perfect Margarita
Diamond Crystal kosher salt
1 thin lime wedge
1 1/2 oz blanco agave tequila
1 ounce triple sec orange liqueur
1/2 ounce freshly squeezed lime juice from about 1 lime
1 very thin lime slice, for garnish
1. Pour enough salt on a small plate to cover it
2. Rub the lime wedge on the outside rim of a 4-ounce cocktail glass. Holding the
glass at a 45-degree angle, dip the outside rim in the salt, rotating as you do, so the entire rim is
coated with salt.
(Avoid getting any salt inside the glass.) Fill the glass with ice.
3. Fill a cocktail shaker with ice. Add the tequila, triple sec and lime juice. Shake vigorously until the shaker turns frosty. Strain into the glass and garnish with a lime slice.
You can enjoy several of these pale yellow beauties while you make and enjoy what looks like some burro-kicking wings:
Green Chile Chicken Wings with Lime-Cumin Salt
* 5 poblano peppers
* 1/3 cup Tabasco Green Pepper Chile Sauce
* 3 tablespoons melted butter
* 2 tablespoons toasted pine nuts
* 1 teaspoon salt
* 1/4 cup Wondrafine ground flour
* Zest of 2 limes
* 3 tablespoons kosher salt
* 1 tablespoon ground cumin, toasted
* Vegetable oil
* 2 dozen chicken wings
Roast 5 poblano peppers on open flame until skin begins to blister. Place peppers
in a bowl and cover with plastic wrap; allow to steam 10 minutes. Peel skin off
peppers and purée in a blender until smooth. Add melted butter, toasted pine nuts,
Tabasco Green Sauce and salt in the blender; purée on high for 10 seconds.
Zest two limes onto a plate and microwave on high for 30 seconds. Combine dried
zest with salt and cumin.
Preheat vegetable oil in fryer to 350º F.
Remove and discard wing tips from wings. Separate each wing into 2 pieces at the joint; trim excess fat and skin. Toss chicken wings in a bowl with flour. Fry wings for 10 minutes or until golden and crispy. Season wings with desired amount of lime-cumin salt. Toss wings in a bowl with desired amount of green chile sauce.
On more than one occasion I have declared that if whatever Frito-Lay sprinkles on their Hint of Lime Tostitos came in a bottle, it could replace both salt and pepper on my dinner table. Maybe the recipe above will come close to that.

On Thursday May 5, 2011, Sol Restaurant in Historic Downtown Franklin will attempt to break the Guinness Book Record for the Largest Tequila Toast in the world. The attempt will be in celebration of Cinco de Mayo, a day honoring Mexican heritage. The event will take place from 5 p.m. until 9 p.m. in downtown Franklin. Main Street will be closed from Fourth to Fifth avenues to allow for the festivities. The tequila toast will take place at 7 p.m.
Special musical guest Frank Ortega will begin playing at 6 p.m. and the Small Time Rock Stars will close out the evening from 7:30 to 9 p.m. The event is sponsored in part by Dos Equis Lager and Milagro Tequila. Tickets to participate in the Tequila Toast will cost $5. Proceeds from the Tequila Toast ticket sales will be donated to the Mercy Children’s Clinic of Franklin. Tickets will be sold the day of the event and can also be pre-purchased at Sol and 55 South Restaurants in downtown Franklin.
