Radius10's Jason Brumm Returns to Nashville as Chef at Merchants

After Jason Brumm closed his prominent Gulch-area restaurant Radius10 and moved away a couple years ago, we weren't sure we'd ever get to see the talented chef again.

The good news is that Brumm has returned, this time working for the Goldberg brothers of Strategic Hospitality as executive chef at their downtown flagship Merchants.

In the interim, the Colorado native and Culinary Institute of America grad has been spotted in various places, including Utah, New York and most recently Washington, D.C.

(Given that Brumm made his name in the beach resorts of northwest Florida, the guy has gotten to cook in an impressive variety of regions and culinary traditions. He even had a Tex-Mex catering company for a while.)

According to Strategic Hospitality, Brumm will initially make only minor changes at Merchants, the grand dame of Lower Broadway, but eventually will completely overhaul the menu.

Nashville company Strategic Hospitality, LLC, is pleased to announce that Jason Brumm will be taking over next week as executive chef at Merchants Restaurant.

Brumm is known in Nashville for his well-loved former Gulch restaurant Radius10, which closed in January 2009. Since Radius10 Brumm has worked as the executive chef at P.J. Clarke’s in Washington D.C., where he lead the kitchen in opening the company’s first venture outside of New York City.

“We had the opportunity to bring Jason back to Nashville and we knew it was one we couldn’t pass on, “ said Benjamin Goldberg, co-owner of Strategic Hospitality, LLC. "I spent many evenings dining at Radius10 and I am beyond excited at the skill, creativity, and passion that Jason is bringing to Merchants.”

Brumm will make minor changes to the Merchants menu in the short term, and will launch a completely revamped menu in the coming weeks. He will embrace the history and integrity of the space by employing some old-fashioned cooking techniques but also bending the rules to create inspirational new dishes.

“I plan to not only embrace southern cooking traditions, as I always have, but also bring some of my new perspectives from other parts of the country,” said Brumm. “The mountains in the west, the Big Apple, and our nation’s capitol have all given me dishes and techniques I will incorporate into the Merchants menu. The classics never go out of style.”

Strategic Hospitality, owned by brothers Benjamin and Max Goldberg, purchased the long-standing downtown establishment last year in an effort to revive it. They have spent the past year stabilizing the business and have revamped the décor, menu and service on all three floors of the expansive restaurant. The first floor is a black-and-white bistro, casual and cool with affordable food and drink selections. The second floor is refined with deep blue walls and dark wood banquets and serves fine dining. The third floor is reserved for private events such as birthdays and rehearsal dinners. Plans for moving ahead include expanding catering and private events and continuing to offer delicious, chef-inspired cuisine.

YES! I only went to Radius 10 once, as it was there during my college days. But that one time was unbelievable!

anyone know what happened with the chef that was previously at Merchants?
