Vote for Murfreesboro Blogger in National Sandwich Contest

Food blogger April Slayden McKinney of Murfreesboro has won $1,000 as a finalist in a national sandwich contest sponsored by Arnold and Oroweat Sandwich Thins. Online voting will decide whether she takes the grand prize — another $1,000 and a free trip to New York.

(It wouldn't be McKinney's first triumphant visit to New York. She was one of three viewers chosen to demonstrate a Thanksgiving dish — sweet potatoes jazzed up with red curry paste, coconut milk and avocado — on the Today show in November.)

The “Spin on Thin” contest was judged by Food Network chef Claire Robinson, host of 5 Ingredient Fix, who selected five finalists in five categories. McKinney won the category called "Simply Delicious: straightforward, with no more than six ingredients."

McKinney's recipe, the Gorgonzola B-A-T, sounds extremely delicious (probably even better than it looks in its photo at right). It unites bacon, avocado (mashed with honey), tomato and Gorgonzola cheese on a Whole Wheat Sandwich Thin.

In addition to her blog, Cookin' Up Dreams, McKinney has turned into a local TV figure. She'll make a return visit to WTVF-Channel 5's Talk of the Town on Friday, Jan. 7. As for the sandwich quest, vote for her at www.facebook.com/SandwichThins. You have until 11:59:59 a.m. EST on Jan. 17. Voting is restricted to one vote per Facebook account per day.

Gorgonzola B-A-T
by April Slayden McKinney

1 100% Whole Wheat Sandwich Thin Roll
2 pieces bacon, cooked and halved
1/2 avocado
1 tsp honey
1 tomato slice
1 ounce Gorgonzola, crumbled or sliced

Directions:
1) Toast roll (McKinney splits it and sticks the halves in a toaster)
2) Smash avocado with honey to make a chunky mixture and add salt and pepper to taste
3) Spread avocado mixture on inside of each half of the Sandwich Thins roll
4) Layer on bottom half of the roll: 4 halves of bacon strips, Gorgonzola, tomato slice, and top with the other half of the Sandwich Thins roll.

(Arnold Sandwich Thins, in case you don't know, are 100-calorie whole-grain sandwich rolls that are flat in shape. They look a bit like pita bread but aren't hollow.)
