It's Not Too Late to Get Organized For Thanksgiving — With Viking's Help

So it's the Monday before Turkey Day and you just woke up to the reality that you need to get your giblets in a row and actually plan a meal for you or two or the whole fam damily. Don't panic. Take a deep breath and check your refrigerator to see if there is already a turkey in there. If not, you might want to consider an unfrozen turkey. Sure, it costs more, but just consider it an idiot tax for waiting so long. The Turnip Truck is stocking some nice reasonably priced fresh turkeys at both their locations.

If there is a turkey, but it is still a little bit frozen in your fridge, you might want to consider consulting the USDA guidelines for how to safely thaw an icy bird. Nobody wants a side of salmonella for Thanksgiving.

For help with the rest of your meal planning, your friends at the Viking Cooking School have created a handy dandy holiday planning guide that is available as a pdf. Pay no attention to the items that they describe as "two weeks before" and "one week before" the big event. They're not talking about you. Those instructions are clearly intended for some group of busybodies who obviously don't read Bites.

If you have any urgent last minute questions or suggestions, post them here in the comments and we'll all muddle through this together.
