Green Tomato Overload at the Open Thread

Open Thread has green tomatoes — and lots of them — from the garden and is perplexed about what to do.

This happens some years that are especially productive, or when the cold arrives early. But never on this scale.

Here are the various destinations for green tomatoes the last decade or so. One year, each tomato was picked, wrapped in newspaper and put into a crate. They reddened gradually, and the last tomato was used around the holidays.

One year the vines were pulled up and hung over the rafters. Tomatoes gradually ripened and were still edible, for cooking purposes, in early December.

A big batch of fried green tomatoes for a party finished off the green stragglers the year when there were just three or four green tomatoes. Same for the year of the roasted-green-tomato and feta salad. It was OK, maybe a little too tangy.

Open Thread is open to suggestions for the green tomatoes — and any other advice, gripes and compliments you've got to finish up the week.
