Since our visit, the chef has already expanded the menu to include burritos, which include the taco fillings, as well as rice and beans, on a flour tortilla. Other changes are on the way to the fledgling business, including the introduction of chef’s feature dishes. In the future, Feo says he hopes to have a taco truck downtown at lunch and late-night.
If you visit Peter Chinn’s, please report back on any new findings.

Went yesterday. My results varied.... Had a beef, chicken, and pork. The beef was chewy, the chicken dry and the pork unremarkable. The tortillas were the worst, fall apart with that undercooked flavor, for lack of better description. Moderately satisfying and encouraging. The tacos are the next size bigger from the local trucks so they are generous for $2/per. Now, I've only been there once, so no fair.
Your quote:
"Meanwhile, the plastic ramekin of Mexican-chili-inspired hot sauce that accompanies the tacos can ratchet up the heat to a nearly unbearable level."
Heh. Next time I go, I'm asking for *two* extra. That wasn't that hot!
Although the flavors were really nice, I didn’t find any sort of heat in the pork, the sauce was a nice addition. I’m hoping they get rid of the somewhat soggy lettuce/onion/cucumber combination and replace it with maybe a spicy slaw or even kimchi. Everything else was just right, and the prices were even better.
Was there on Thursday and we got the beef kogi, pork, chicken and fish. Favorite were fish and beef. Pork was chewy. Well worth $2. The worst aspect is the location on the far side of Metro Center, but will most assuredly be back.
