After months of anticipation--and salivation, particularly as the roasting began and the earthy aroma of chocolate circled Riverside Village--Olive & Sinclair Chocolate Co. is open for business. Founder Scott Witherow and his team are transforming beans into bars in the building behind Mitchell Deli and Sip Coffee House, selling an array of exquisite chocolate bars--riddled with cocoa nibs, coffee ground and salt and pepper.
Witherow, a Cordon Bleu graduate and former pastry chef at F. Scott's, has a résumé that winds through Nashville kitchens including Firefly Grille, The Trace and Wild Boar, as well as through the Fat Duck and Nobu in England. He has worked with culinary legends such as Grant Achatz at Alinea in Chicago and Frank Stitt at Highlands Bar and Grill in Birmingham.
Olive & Sinclair bars, priced around $6, are available at Mitchell Delicatessen, Imogene + Willie, The Green Wagon, Caldwell Collection, The Produce Place and The Turnip Truck.

I follow them on twitter, but sadly they never ever reply to any tweets. :( I like it when business are interactive. Crema, Dunn Bros, Amerigo, and just a few that are great at twittering their specials & deals, and also sometimes interacting if I twitter at them.
Ok.... Just realizing this got off subject.
Anyway, I am excited to purchase some of the chocolate after sampling it once. :D
Just to clarify, when I would twitter at them, I would be asking when & where their bars would be a available for purchase. This was a couple weeks ago.
I tried the regular version, but I am DYING to try the salt & pepper! I've been snacking on dark chocolate with sea salt I picked up at World Market recently, so the salt & pepper flavor really intrigues me.
Tried some Saturday. Wow. Ridiculously good, it is complex and delicate and makes you feel sad for ever having eaten a Hershey's bar.

I love this place. I stopped by on two different occasions just to peek and see what/when/where and, while I am not advocating doing the same bec. they are not really doing retail out of the shop, I just want to say welcome to the 'hood and thanks for being so hospitable! Both times they opened the door, led me around, talked chocolate with me and gave me a sample. And it was delicious! The guys were nothing but gracious and friendly and I'm excited to have them in E. Nashville. I've since picked up a salt and pepper and a sea salt bar, which I have yet to try. I'm saving them for a special treat. Welcome, O & S, and I look forward to following your successes.
Enjoyed the dark version at Produce Place this afternoon. While the bar was outstanding, I couldn't find any organic or fair trade information. C'mon, those are standards for decent chocolate these days.
